Freeze drying, also known as lypholisation, a low temperature dehydration process that involves freezing the product, lowering pressure then removing the ice by sublimation (ice to vapour). All moisture is removed from the item. This is different to dehydration that evaporates water using heat. Allowing for the item to taste the same, sometimes even more intense in flavour with a lighter texture. The aim of freeze drying is to create a readily water-soluble product that has the same characteristics of the original product after the readdition of water. Freeze drying is often considered the “Gold Standard” of dehydration and the drying process in terms of overall quality. 

Freeze-Drying allows any moisture in the candy to escape. This results in the candy becoming light and crunchy.
